The Aviary, which was named one of the best bars in the world earlier this year, recently opened a location inside the Mandarin Oriental hotel in New York City.
Complete with a view of Central Park and cocktails that redefine what mixology and bartending can be, the bar is a creation of Grant Achatz, the mastermind and chef behind Alinea, the best restaurant in America.
We got to witness the making of three visually stunning and equally delicious cocktails — take a look, below.
The lounge seats 90 guests and is on the 35th floor of the hotel, providing sweeping views of Central Park below.
Bartender William Peet demonstrated how he makes the 'Heart of Stone' cocktail. Here, he carefully places black and Rooibos tea leaves, pistachios, saffron, orange, fresno chile, and peach into a container.
A mixture of bourbon, whiskey, white port, and pistachio liqueur are then poured into the canister to infuse the flavours.
The chile heavily influences the end taste, giving it a hint of smoky spice. Still, it's sweet because of the peach and orange. The resulting liquid is somewhat thick, and the pistachio flavour reminded me of olive oil.
The second cocktail, called 'Science A.F.,' bubbled, gurgled, and finally, came alive. It's inspired by the modern classic cocktail The Penicillin.
Its solid ingredients include lemon, ginger, berry meritage tea, honey, blueberries, and dry ice. The alcohol components, which include scotch and ginger liqueur, are heated up in a tabletop vacuum siphon. It first bubbles up to become infused with the ingredients, then as it cools, it falls back down into the basin, ready to pour over ice.
This drink's ingredients and its bright red, somewhat syrupy consistency reminded me faintly of cough syrup, though it's much less sweet. This drink can be made without alcohol for children who want to witness its elaborate creation.
The 'Wake and Bake' is inspired by a New York breakfast classic: the everything bagel. The liquid consists of rye whiskey, coffee, and orange, which are infused into vermouth.
The frosted glass is then carefully placed inside a bag that is filled with everything-bagel-scented air and vacuum-sealed using a Volcano device.
As the bag is cut open, the scent of freshly baked bagels fills the air, and the coffee flavour is strong.
