Shake Shack has a new fried chicken sandwich called the “ChickenShack.”
Alas, it’s only available in three Brooklyn, New York locations this summer. We were able to hop on the subway to one of those locations to test it out.
While we were there, we met Mark Rosati, Shake Shack’s culinary director. As head of culinary, Rosati is responsible for the menu at Shake Shack.
He told us that the chicken sandwich was two years in the making. He also said that if it had not been for a snafu with Shake Shack’s fries, the chicken sandwich might not be possible.
In 2013, Shake Shack decided to switch its fries, going from crinkle cut fries to something fresher, and home made. Rosati says that everything else at Shake Shack is fresh made, so the company thought it made sense to make its fries home made.
Customers disagreed. They missed the old crinkle cut fries. After a year of testing the fresh fries at half its locations, Shake Shack decided to switch back to the crinkle cut fries. Customers were overjoyed. According to Rosati, the Facebook posting announcing the new fries was the most liked post of all time for Shake Shack.
Rosati says the people just have an emotional attachment to the crinkle cut fries. They’re also good for collecting ketchup and cheese.
So, what does this have to do with chicken?
Well, to make the fresh fries, Shake Shack had to double fry the fries, which meant it needed more fryers in the kitchen. Once it went back to the crinkle cut, it didn’t need the extra fryers.
The extra fryers are now being used for the chicken. Rosati says he probably couldn’t have done the chicken if not for the extra fryers that were available thanks to those now abandoned fresh cut fries.
