Every fisherman in Oklahoma has his eye on the local paddlefish.It turns out the paddlefish eggs, which retail for around $21 an ounce, taste and look a lot like beluga sturgeon eggs—the most expensive caviar on the market, which can cost several hundred dollars an ounce.
Now a swell of fishermen are flocking to Oklahoma to catch paddlefish and sell them. But many are catching more fish than allowed by the legal limit, leading wildlife authorities to worry about the future of the fish in local waters, according to local radio station KRMG.
In some cases, after the roe is harvested, it’s shipped somewhere elsewhere and then imported back into the U.S. labelled as beluga sturgeon.
It sounds like someday soon the joke will be on consumers who are forking over cash for expensive caviar and winding up with fish eggs out of Oklahoma.
