Why chopping onions makes you cry and a surefire way to prevent it

Anyone who’s spent any time in the kitchen, knows that prepping onions can have an emotional reaction. It’s all due to compounds inside the onion that get rearranged when you chop it up. The chopping action releases a gas that irritates the eyes. There is one trick to keeping that gas inside the onion and not in your eyes.
